Easy Crockpot Spin & Art Dip

SO, I treated myself a few months back, and bought a mini (1.5 quart) crockpot. But in typical Morg fashion, it has taken me 2 months since I purchased it to actually ~whip~ something up. Do you ever wakeup CRAVING a food you necessarily shouldn’t be, let’s say, before 10am? Well, the other day I woke up at the crack of dawn (as I usually do) craving good ole spinach and artichoke dip (not so usual). I’m a BIG app gal, and always feel a little guilty for only ordering apps at restaurants outside of the hours of the Happy ones. So, you may have guessed it, I went to the grocery, and got everything I needed for a recipe I found on Pinterest.
I invited some friends over, but in these passing hours, I thought I’d share this experience and recipe with you :)
Ingredients:
8oz light cream cheese
16oz light sour cream
1 stick of butter (1/2 cup)
10oz of frozen spinach (yes, frozen)
14oz artichoke hearts
4oz diced mild chilis (do worry, won’t make it spicy)
1 - 1/2 cup shredded parmesan cheese
1/4 cup romano cheese
1 TBS chopped garlic (minced works as well)
Process:
Thaw the spinach completely. . .if you’re getting hangry, I suggest the microwave, but natural thawing is favorable
Drain any liquid from the spinach and chilis — coffee filters are helpful when it comes to draining the spinach. . . the dip will become watery the more liquid in these ingredients.
Literally mix everything in the crockpot, every ingredient
We found out the hard way, but my 1.5oz crockpot was not large enough, so we had to transfer into the larger crockpot . . .SAD DAY when I couldn’t use my mini crock . . . another day I suppose.
On the low setting, cook for 40 minutes, stirring the dip every 10 minutes
While cooking, determine your spread of dippers (listed below)
40 minutes later . . . .

Tostitos - scoops are preferable in this situation
Pretzels 🥨 of all shapes and sizes (seriously I can eat pretzels with just about anything)
10/10 would make again!! We ate almost every ounce. . almost. I think it's perfect for a potluck, tailgate, bible study, tupperware party, or just to curb a craving.
